Oh 28...

Well another Birthday has come and gone! 28 is not really an exciting year so we kept things pretty low key. All I wanted to do was spend time with those that I love and I got that wish.  My b-day celebrations were calm, relaxing and with the people closest to me.
For my birthday dinner this year we had Indian Food from Wing Express at UConn which was delicious! I love everything about Indian food. The smell, color and explosion of flavor is just incredible and a nice change from our basic takeout of pizza or chinese!

The Vegetable Pakora, Vegetable Samosa, Baigan Bhartha and Shrimp Tandoori Masala were fantastic & a perfect way to celebrate another year! Cheers to another healthy & happy year to everyone!

Birthday Wish List...

Since my Birthday is right around the corner I (like every year) decided to create my Birthday Wish List. My husband is always good to me but since we have a lot of travel plans this summer I really don't want to get carried away! I am having a hard time deciding between the MK Watch and the Initial necklace. I love Max & Chloe Jewerly so we shall see ;)

To Be a Princess...

I think most girls woke up extra early this morning just to see one of the most beautiful women in the world walk down the isle. Kate Middleton is absolutely stunning with a presence of royalty and grace. I wish I could go back to my wedding day when I too... felt like a princess.

Amazing Easter Cake!

Easter weekend was beautiful with finally, some warm weather! My cousin Kayla made the most amazing cake I have ever seen!

Perfect Pancakes

Since it is officially Spring and we now have fresh produce in our markets I have become obsessed with everything Blueberry this year. When I received this set from Stonewall Kitchen I was so excited to go home and make pancakes! My husband and I have breakfast for dinner a lot and since we are on a healthy regime I wanted to work that into this recipe as well.

Instead of using the batter as directed I substituted the eggs for egg whites and used 1/2 Stonewall batter and 1/2 whole wheat pancake batter. I also added a handful of oats, a splash of vanilla and a hint of cinnamon. Needless to say... they were delicious! The Wild Maine Blueberry Syrup is also from Stonewall Kitchen and even with my love for Maine aside, it too was perfect!

It's finally Spring!

The weather here in CT has finally cooperated and we have taken our first family trip ( and Ariel's 1st trip ever) to the lake house for the year! There is something about being here that is so peaceful and serene.

I cannot wait until the warmer days so I can bask in the sunshine and let my playful pups jump in the beautiful water! Spring is officially here which only means that Summer is on it's way ;)

Chicken Pesto Pizza

I am excited to finally have my husband home for dinner tonight! Here is what we will be cooking up together!

Ingredients:

  • 1 tube (13.8 ounces) refrigerated pizza crust
  • 1/2 cup water
  • 3 tablespoons olive oil
  • 1 envelope pesto sauce mix
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped onion
  • 2 cups shredded cooked chicken
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 4 plum tomatoes, sliced
  • 1 cup (4 ounces) shredded Swiss cheese
  • 1/4 cup grated Romano cheese

Directions

  • Unroll pizza crust into an ungreased 15-in. x 10-in. x 1-in. baking pan; flatten dough and build up edges slightly. Prick dough several items with a fork. Bake at 425° for 7 minutes or until lightly browned.
  • Meanwhile, combine the water, oil and pesto sauce mix in a saucepan. Cook until heated through (do not boil). Add the spinach, ricotta and onion; mix well. Spread over crust. Top with the chicken, mushrooms, tomatoes and Swiss and Romano cheeses. Bake at 425° for 7 minutes or until crust is golden and cheese is melted. Yield: 8 servings.

New Obsession in Nails!

Since the start of 2011 I have only been to get a Manicure 3 times, and in all of those weeks my nail polish did not chip once!
This is all thanks to the wonderful world of Gel Nail polish! With OPI's hot new trend it makes it easy to match your toes to your nails (since they are the same colors in Gel) and keep your nails looking Fab for more than two days!

I encourage everyone to try! The cost is usually between $25-$35/a session and well worth it! Let me know what you think!

Pumps for the Puppies!?!

Too Cold... Even for the Dogs!
The weather here in Connecticut has reached an all time COLD of -10 Degrees and even my dogs are upset about it!

My snow loving Ariel has been crying in pain because her paws are so cold that it makes it difficult for her to walk. I have always been against doggie snow shoes but if this keeps up, we might not have a choice!
I have been on the search for reasonable dog shoes and have found a few fun websites! After all, they get cold too!

So Sweet 2011!

Let’s Go 2011!
Since the overload of holiday sweets is FINALLY over it is time to get back on track and bring in the New Year with some Healthy and Tasty treats! Going through sugar withdrawal is not a fun process but luckily the new trend of 2011 has already been added to my pantry and is the next new best thing! What is it you ask? It’s Agave Nectar! This sweet substitute to sugar has little calories and no harsh chemicals, it is all natural!

I have been researching what my first trial baking would be with this Agave since it already use it in my coffee and on fruit and I stumbled across this wonderful recipe on Baking Bites. I cannot wait to get back from vacation (which will be another Detox in itself) and try out this delicious concoction!

I will keep you updated on how it turns out! Happy 2011 Everyone and Check out Baking Bites for MANY Wonderful and Exciting Recipes!

Comfort Foods...

Wednesday of this past week I had a small surgical procedure done, nothing big. But with recovery comes comfort and what better of an excuse to indulge in some yummy comfort food!
Since I am also forbidden from the gym for at least a week I know that I cannot go overboard so choosing my comforts wisely has been a challenge but fun!

Oh Baby!

I am at a point in my life where babies are all I think about. I know my dear husband gets a baby comment at least once a day and that I have become obsessed with researching everything there is to know about getting pregnant, birthing options, baby names etc. It really wasn’t until I read an article on thebump.com that I really got an insight as to what labor might really entail. All of the unspoken moments that somehow all of my friends failed to mention or had the grace of god not to experience were listed right in front of my face.

This article titled Crotch 101 is about the most in-depth look into the world of birthing that I have ever experienced. I actually thought I might pass out while reading it the first time!

Although I never considered that any pregnancy would be “easy” I certainly never envisioned what it might entail. For anyone who has a queasy stomach, this article is not for you. I only share this because I feel that this gives all of us non-pregnant women an insight into the unspoken world of childbirth. I apologize if I offend anyone however I feel that this is the kind of information that most women should know.

Now that I have mentally prepared myself for these potential circumstances, I find that I have a better approach into the getting pregnant/pregnancy world. Motherhood is a club that I hope to join next year so any, even if traumatizing, information is welcome!

These are a few of my favorite things!

Here are a few of my all-time favorite things! Can you relate to any of them?

1.      Maybelline Great Lash Mascara- It may sound like an odd item to put first on my list… but I couldn’t live without it! I prefer this mascara over any other fancy smancy brand I have ever bought. Often times I will venture off and try something new but always find myself returning to this neon pink bottle.

2.      Leggings- Not only are leggings this year’s new must have item but they are the most comfortable item of clothing that you can possibly wear out! I retreat to my leggings every weekend. They can dress an outfit up with some nice tall boots, classy stiletto pumps or relax with a nice fuzzy pear of Uggs. Which brings me to my next item…

3.      Uggs- Who can live without them! Each step in a pair of Uggs is like floating on air. They are cute yet comfortable and by far the only item that keeps my toes warm all winter! They are a versatile boot that can be used (and often times is) all year round.

4.      Puppies- Why else would I have named my blog after them? My two puppies are my life! No matter how bad your day or how bad your mood once I enter my home and see these two little faces come running at me everything just washes away. Their unconditional love is priceless and the enjoyment that they bring to me every day is unforgettable.

5.      Thymes Frasier Fir Candles- Thanks to my friend Lindsay I have found my best holiday accessory! Since my husband and I have decided to go with a fake tree (due to my favorite item #4) I have missed the smell of Christmas pine trees! Well, not any longer! This candle goes above and beyond any Yankee candle that I have ever smelled and I wait all year to take it out! I strongly recommend this to everyone this holiday season!

6.      Dr Scholl's For Her Fast Flats- I am pretty sure this goes without saying! Whoever invented this is genius! I cannot even count how many times I have come home barefoot after a night out! Now you can simply throw these as an amazing backup plan in your oversized bag! Just don’t forget your shoes anywhere!

7.      Facebook- Yes, it’s kind of cliché but who doesn’t love Facebook? It’s a great way to stay connected with so many people in one way! I can talk to family and friends and stay updated on all of life’s recent events. My husband refuses to join and there is no way for me to explain to him what he is missing! I think he will cave in soon.

8.      HGTV- This is my go-to channel on any given day. Now that I have hit my late 20’s and am a homeowner I find joy in learning little design DIY projects! I know I am not alone in this little obsession!

9.      Johnson’s Baby Lotion- Back to basics! I feel that moisturizing everyday is a necessity and with all of the fancy lotions and creams out there it is hard to find your perfect one. For me it all goes back to the first lotion that was ever on me! It is gentle yet extremely moisturizing. For anyone who has sensitive skin like me then this is a great solution! Plus smelling like a baby is always relaxing on its own.

10.   Snuggies- I know that this has become one of this year’s most controversial items but I love mine! As I sit here and type fully covered in a blanket of warmth I am thankful that someone finally made a blanket with arms! My husband thinks I look like a monk but I think I look like a warm lady enjoying everything from a glass of wine to a fine book. Everyone should own a Snuggie! My dogs even have one!

What are some of your favorite things?
